As you can probably tell, I LOVE CHEESECAKE!!! This is a super simple recipe for a high quality, rich and easy key lime pie. All you need are a few ingredients. Here we go!
1 graham cracker crust (I use the store bought one for this recipe, but you can make your own if you prefer that.) (See my recipe for homemade graham cracker crust.)
1 cup heavy whipping cream
14 oz. can of sweetened condensed milk
1 (8 oz.) container of cream cheese
1/2 cup key lime juice
a little lime zest, if you prefer
Step One: Using the whisk attachment on your stand up mixer, whisk the heavy cream on high speed until it's nice and stiff. Then, set aside in another bowl.
Step Two: Using the paddle attachment and low setting on your mixer, mix the cream cheese for about 2 minutes.
Step Three: Add the sweetened condensed milk to the cream cheese mixture and mix on medium for another minute.
Step Four: Add the whipped cream and mix that for about a minute.
Step Five: With the mixer on low speed, add the key lime juice and mix until smooth.
Step Six: Pour the mixture in prepared pie crust and let stand in the refrigerator overnight.
Step Seven: Top with some whipped cream to decorate your pie and it's ready to serve! Enjoy!
You can also garnish your pie with lime slices!!
