I love lemon ice box pie, especially during the summer! It's so cooling and perfect for a hot day! This is a simple, no bake, recipe and here's what you'll need:
You'll Need:
1 graham cracker crust
2 cans sweetened condensed milk
3/4 cup lemon juice
1 teaspoon vanilla
lemon zest (if you prefer)
Step One: In a large mixing bowl, your going to add your sweetened condensed milk, lemon juice, lemon zest and vanilla. You can either use a fork, whisk or the paddle attachment on your stand up mixer and blend all ingredients until smooth and creamy.
Step Two: Pour the mixture into your pie crust and let stand in the refrigerator for about 3 hours. Super easy and simple! Enjoy!
I love to top my lemon ice box pie with cool whip, whipped cream or, look up my recipe for marshmallow drizzle topping and use that!!!
