Pineapple Casserole

For all you pineapple lovers out there, this is one really awesome pineapple casserole!! My mom makes this one every Thanksgiving and Christmas, and it's perfect for a side dish anytime! It has cheese, pineapple and Ritz crackers. Wow! What a combo!


You'll Need:


20 ounces pineapple tidbits drained (reserve 1/4 cup juice)

20 ounces crushed pineapple (drained)

6 tablespoons all-purpose flour

1/2 cup granulated sugar

2 cups shredded sharp cheddar cheese

40 Ritz butter crackers

1/2 cup melted butter


Instructions:


  1. Preheat the oven to 350 degrees F.

  2. Spray a 9x9 inch baking dish with cooking spray.

  3. Drain the juice from the cans of pineapple, but reserve 1/4 cup juice for later.

  4. In a medium mixing bowl, combine the flour, sugar, cheese and pineapple juice.

  5. Pour the mixture into your baking dish.

  6. In a small bowl, mix the cracker crumbs and the butter.

  7. Sprinkle the cracker crumbs over the pineapple mixture.

  8. Bake for 35 minutes or until the top is golden brown.
