This Strawberry Poke Cake is perfect for any occasion!! And, if you don't want to use the strawberry flavored Jell-O, you can play with the recipe and use any flavor that you like! My sister made one with orange Jell-O and it was phenomenal!! I'm going to use peach for my next one!! My husband loves anything peach!!
Ingredients:
1 box French Vanilla cake mix
1 cup water
3 large eggs
1/3 cup oil (canola or vegetable)
3 ounces strawberry Jell-O mix (or any flavor you choose)
1/2 cup cold water
8 ounces Cool Whip
1 quart strawberries (or any fruit you choose) (You can also leave the fruit out)
Instructions:
Mix together the cake mix, water, eggs, and canola oil. Bake it according to package directions.
When the cake is fully baked, remove it from the oven, and allow it to cool for about 15 to 20 minutes.
Meanwhile, mix the Jell-O mix with the boiling water in a large measuring cup.
Then add in the cold water, continuing to mix well.
Poke holes all over the top of the cake with a fork, creating small holes all over the top of the cake.
Slowly pour the Jell-O mixture over the entire cake.
Allow the cake to finish cooling.
Spread whipped cream (or your preferred white frosting) evenly over the entire cake.
Chill the cake for at least 2 hours before serving with fresh berries on top.
