Chewy Pecan Pie Bars!!

Now this another staple that I must have at Thanksgiving and Christmas! Pecan Pie, mmmmmm! So good. But now, we can make the bars, and have them all year long!! Loving it!!


Ingredients:

  1. 1 ¼ cups all-purpose flour

  2. ½ cup powdered sugar

  3. ¼ teaspoon salt

  4. ½ cup butter (cold)

  5. 2 eggs, slightly beaten

  6. 1 cup chopped pecans

  7. ½ cup packed brown sugar

  8. ½ cup light-colored corn syrup

  9. 2 tablespoons butter, melted

  10. 1 teaspoon vanilla

Instructions:

  1. Preheat oven to 350 degrees. For the crust, in a medium bowl mix together the flour, powdered sugar and the salt. Using a fork or a pastry blender, cut in the ½ cup of cold butter until coarse crumbs are formed. Pat into the bottom of an 11x7x1 ½ - inch baking pan and bake for 15 to 20 minutes until golden brown.

  2. While crust is in oven, stir together the eggs, pecans, brown sugar, corn syrup, the 2 tablespoons melted butter, and the vanilla. Spread evenly over the baked crust. Bake for 20 minutes or until filling is set. Cool completely on a wire rack. Cut into bars.
